The Fluffy Chocolate and Pears Cake is truly irresistible! And it is adaptable to your taste and food exigencies. It can be vegan, or with a donut shape, and you can also add all the spices you prefer.
Our recipe is the classical and traditional one: easy to make, with a perfect fluffy texture that melts in your mouth.
As always, aim for the high quality ingredients that make the difference. Look for the sweetest pears that will sink in the cocoa dough in a perfect hug with the dark chocolate chips!
Moreover, the pears are a versatile fruit: they are great to combine with savory taste. As an Italian proverb says: “Do not let the farmer know how good is the cheese with the pears”. Indeed, when the fruit is ripe, its sweetness combines perfectly with every dessert.
We chose dark chocolate to balance the pears sugariness.
- 4 big pears, compact and juicy
- 1 cup all purpose flour
- 3 Tbsp cocoa powder
- 1 cup granulated sugar
- 2 Tbsp baking powder
- 1/3 cup butter or Sunflower oil
- 2 eggs
- 1/2 cup plain yogurt
- 1 cup chocolate chips
- 1 vanilla stick
Add some flour, some cocoa powder, some yogurt, and repeat until you mix all of them.
Add the chocolate chops (keep 2 Tbsp of chips on a side to decorate at the end.
Peel the pears, remove the core, slice them.
Pour the dough in a round baking pan that you previously dusted with butter and flour.
Arrange the pears on top of the dough in a circle, without soaking them in the dough.
Sprinkle the remaining chocolate chips
Bake in the over for 40 – 45 minutes. Always do the toothpick test.
Let the cake cool down
You can keep the cake for 2-3 days at room temperature
Furthermore, you can sparkle the cake with your creativity: try it with some cinnamon, for a holiday season perfection, or add some orange zest to sour the sweetness, or sprinkle some amaretti biscuits, shredded almonds or hazelnuts.
We love seasonal products, so look for the perfect sweet pears at your local farmers market or grocery store. Also the Kaiser Pears fit the recipe, the ones that are the “classic” shape of a pear: brown skin, juicy pulp, with a taste that alternates sweet and sour and a compactness tending to crunchy.
